It’s time to upscale winter’s ultimate comfort food.
Is there anything better than some good old mac’n cheese? We didn’t think so either, but then Deerhurst’s Executive Chef David Bakker added lobster and the whole world got turned upside down! BEST IDEA EVER.
What you’ll need:
2 Tbsp vegetable oil – 2 tbsp.
1 clove chopped garlic
1/4 cup minced shallot
1 whole vanilla bean, beans scraped from the pod
1/2 avocado coarsely chopped
1 cup cleaned lobster meat
1 cup 35% cream
1/2 cup parmesan cheese
1 1/2 cup of cooked penne
1/2 smoked Gouda cheese
Fresh chopped parsley, and arugula to garnish
Pre-heat pan over medium heat
Sauté onions and garlic, season with salt and pepper
Add double smoked bacon (we recommend using pancetta)
Add vanilla beans and chopped avocado
Add cream, lobster and parmesan cheese
Let cream slightly reduce
Add cooked penne and toss
Pour into oven proof bowl and top with smoked gouda
Bake at 350 F until cheese has melted and pasta is hot to the core
Finish with herbs and arugula
